Peach Berry Pie

Peach Berry Pie has been a crowd favorite everywhere I have shared.

This pie has very little sugar so you can taste the peaches and berries perfectly. It is thickened with tapioca which adds to the texture!

Happy Baking!

▢ 1 lb peaches (peeled and cubed) 🍑

16 oz fresh or frozen berry mix (blueberries, strawberries, black berries, raspberries)

1/4 c sugar

1tbsp lemon juice

1/2 tsp vanilla extract

2.3 c water

.25 c tapioca

pinch salt

  • Peel and cut peaches

  • Combine all fruit and sugar in a medium sauce pan over medium heat

  • Bring to a boil (time will differ depending if you have chosen fresh or frozen fruit.

  • Add lemon juice, vanilla extract, and water.

  • Stir until mixed.

  • Bring mix to a boil.

  • Add tapioca.

  • Cook until tapioca is about half cooked (you will be able to see small white specs in throughout the mix-see image below)

  • Remove from heat, add salt.

  • Pour peach berry pie filling into uncooked bottom crust.

  • Place full cover, lattice, or dough cut outs on top of pie filling.

  • Melt 1 tbsp of butter and brush the top of your pie crust.

  • Sprinkle with sugar.

  • Loosely cover outer edge of pie with foil or use a crust shield.

  • Bake for 45 minutes or until crust is golden brown.
