
Peach Berry Pie

Peach Berry Pie has been a crowd favorite everywhere I have shared.
This pie has very little sugar so you can taste the peaches and berries perfectly. It is thickened with tapioca which adds to the texture!

PEACH BERRY FILLING
▢ 1 lb peaches (peeled and cubed) 🍑
▢ 16 oz fresh or frozen berry mix (blueberries, strawberries, black berries, raspberries)
▢ 1/4 c sugar
▢ 1tbsp lemon juice
▢ 1/2 tsp vanilla extract
▢ 2.3 c water
▢ .25 c tapioca
▢ pinch salt

Peel and cut peaches

Combine all fruit and sugar in a medium sauce pan over medium heat

Bring to a boil (time will differ depending if you have chosen fresh or frozen fruit.

Add lemon juice, vanilla extract, and water.

Stir until mixed.

Bring mix to a boil.

Add tapioca.

Cook until tapioca is about half cooked (you will be able to see small white specs in throughout the mix-see image below)

Remove from heat, add salt.

ASSEMBLY

Pour peach berry pie filling into uncooked bottom crust.

Place full cover, lattice, or dough cut outs on top of pie filling.

Melt 1 tbsp of butter and brush the top of your pie crust.

Sprinkle with sugar.

Loosely cover outer edge of pie with foil or use a crust shield.

Bake for 45 minutes or until crust is golden brown.
